Best Ever Potato Salad

First off, I'm not what you might call a skilled cook.
My mom's potato salad was pretty darn good; when I ran across this one, called "Best Ever Potato Salad," I was skeptical. You might be, also...but be skeptical no longer. This is a potato salad that even I can get rave reviews from (and have). It's become a hit at company picnics. The secret? Bacon. Try it yourself:

(From the Oscar Mayer Celebration Cookbook), which I believe is out of print.

10 slices Oscar Mayer bacon
3/4 cup mayonnaise
1 tablespoon prepared mustard
2 teaspoons sugar
1 teaspoon salt
4 cups cooked and diced potatoes
4 hard-cooked eggs, chopped
1 stalk celery, chopped
1 small onion, chopped
1/2 medium green pepper, chopped

Cut bacon into 1-inch pieces. Cook in skillet on medium-low heat until crisp.

Drain bacon, reserving 2 tablespoons drippings in skillet. Remove skillet from heat.

Add mayonnaise, mustard, sugar and salt; mix well.

Combine potatoes, eggs, celery, onion and green pepper in bowl.

Add dressing and toss. Stir in bacon. Cover. Chill several hours before serving.



What I do:

In place of potatoes, above, buy one bag Ore-Ida Southern Style hash brown potatoes. Put in bowl, microwave until hot. Put potatoes in fridge to cool.

In place of chopped onion, above, use 1/2 bag (more or less) Ore-Ida Frozen Chopped Onion.

I usually use more bacon than this, too, and never use the celery.
